But they have the look, feel and sound of the higher end violins.

You have to develop an ear for what sounds right and what the sound of proper playing should be. Then you can see how well you progress with how you sound on the violin. But if you practice with a cheap model, it will only discourage you from wanting to improve in your skill level because you will not be able to produce good sound quality at all with these low end violins.
